1 lb ground beef (or turkey)
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 cups uncooked pasta (elbows or rotini work well)
2 cups shredded cheddar cheese
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp salt
½ tsp black pepper
Optional: 1 cup diced pickles, for topping
Instructions:
Preheat oven to 350°F (175°C).
In a large skillet, brown ground beef with onion and garlic, breaking up meat, until cooked through. Drain fat if needed.
Stir in diced tomatoes, tomato sauce, ketchup, mustard, salt, and pepper. Simmer for 5 minutes.
Meanwhile, cook pasta in salted water for 2 minutes less than package directions; drain.
Combine beef/tomato mixture with cooked pasta and 1½ cups cheese. Mix well.
Spread into a greased 9x13-inch baking dish. Top with remaining ½ cup cheese.
Bake 20–25 minutes, until bubbly and cheese is melted. Add diced pickles if desired before serving!
